Chicken Avocado Salad with Green Chili Yogurt Sauce


Chicken Avocado Mix:

• 5 oz chicken
• 1 ½ tbsp celery
• ½ avocado
• 1 tbsp roasted jalapenos
• 1/3 cup Greek yogurt
• ½ tbsp lime juice
• 1 tbsp fresh parsley
• 1/8 tsp table salt
• 1/8 tsp pepper
• ¼ tsp cumin
• ½ tsp za’atar
• ½ tsp Pita Jungle green sriracha or green chili sauce

Salad Mix:
• 2 oz chopped romaine hearts
• 1 oz spring mix
• 1 oz baby arugula

Additional Salad Ingredient:
• ¼ cup tomatoes

Lemon Vinaigrette:
• ¼ cup lemon juice
• ¼ cup extra virgin olive oil


1 handful of pea sprouts


1.     In a large mixing bowl, add the chicken avocado mix ingredients. Mix lightly with a spoon and set aside.
2.     In a separate bowl, prepare the lemon vinaigrette by mixing the lemon juice and extra virgin olive oil with a whisk.
3.     In a third bowl, add the chopped romaine, spring mix, and baby arugula to prepare the salad mix.
4.     Add the lemon vinaigrette to the third bowl containing the salad mix. Mix lightly.


On a plate, add the prepared salad mix. Top the salad mix with chopped tomatoes. Next, place the chicken avocado mix on the salad. Garnish with pea sprouts.
