Pickle Hummus Recipe


15 oz garbanzo beans (can) rinsed and drained
3.5 tablespoons of tahini
5.5 tablespoon of lemon juice
3 cloves of minced garlic
2 medium Mediterranean pickles (diced)
ó teaspoon of salt2 tablespoon of extra virgin olive oil


Pinch of paprika
Pinch of cumin
Some minced pickles


In a food processor add, the garbanzo beans, tahini, minced garlic and salt. Turn the food processor
on, drizzle the lemon juice, then drizzle slowly the evoo. Stop the food processor and with a spatula move the ingredients, blend it again. Due it over if necessary until you have asmooth consistency. If too pasty, drizzle some water.Remove from processor and place in a bowl and mix in the diced pickles with a spatula.

To Serve:

Scoop a few tablespoons in the middle of a plate and swirl into a hummus crater. Sprinkle some cumin and paprika and garnish with extra minced pickles. Serve with your favorite chip (pita, or blue corn chip)
