Pita Jungle has a reputation for crafting delicious vegetable-based goodies like elaborate salads and filled-to-the-brim wraps. These exotic culinary outings forego what we in America understand as acceptable cuisine and reach beyond the borders, borrowing recipes and ingredients from the Mediterranean to give citizens and tourists of Arizona much-needed dose of fresh flavors. With this kind of resume, you wouldn’t think that we also lend our scrumptious wizardry to pizzas, but you would be wrong.

What is a wood-fired pizza?

It is a pizza cooked in an oven that uses real wood as its fuel. This means that the dough and all of its toppings are put in the middle of a roaring fire that contains the natural aroma of burning wood. The finished concoction is a pizza that is crispy on the outside and soft on the inside, with a rich, smokey scene that keeps its essential flavors perfectly intact.

Where our pizzas differ from others is in how they are prepared before they enter the oven. Each variation keeps in line with our Mediterranean practices.

  • The Lavosh Pizza, for example, is Lavosh crust topped with mushrooms, bell peppers, Kalamata olives, tomatoes, feta cheese, mozzarella and herbs.
  • The Roasted Garlic and Portobello Pizza is topped with roasted garlic and onions, portobello mushrooms, tomatoes, fresh mozzarella, feta cheese, fresh basil, herbs, Kalamata olives and Parmigiano Reggiano cheese.

We take the platform of a pizza and dress it with all kinds of special toppings that are uncommon at the majority of other restaurants. Some of these combinations may sound too eccentric for a lot of people, but our chefs prepare them to make them friendly to new customers and skeptics.
