No Gluten? No Problem!

It seems that all of a sudden, gluten has become public enemy #1. The gluten-free trend has been criticized as the latest fad in diets, but there’s actually scientific evidence behind the need for many to maintain a gluten-free diet. For some, the need is more serious than for others, but with most healthy foods already being gluten-free, the G-free lifestyle doesn’t have to be a major challenge.

What is Gluten?

Gluten is found in lots of foods. It’s the general name for the protein found in various forms of wheat, rye and barley. It’s the glue that holds food, like pasta, together and helps it maintain its shape. Celiac Disease and wheat allergies, where serious health problems can arise from consuming gluten, are both rare conditions that have been around for a long time. But, non-celiac gluten-sensitivity, a much more common and less threatening condition, is something that research scientists have only more recently found evidence for — hence the rise of the gluten-free lifestyle.
